Tofu sandwich and leftover burrito lunch



Tofu sandwich (tofu, avocado, pickles, vegan mayo, hot sauce)
Leftover New Seasons burrito (tofu, refried beans, cilantro rice, mango salsa, pico, guacamole)

I made extra lunch so I would have enough food, unlike yesterday.

Tofu Bahn Mi

Pressed Eggplant and Olive sandwich

I made this recipe again this week.



Changes I made:
- My greens had gone slimy, so I didn't have any spinach to put on the sandwich.
- I added some smoked tofu to help even out the deep flavours of the olives and eggplant.
- I put vegan cream cheese on both sides of the bread.
- I picked up the olives already chopped from the olive bar at the grocery store, and they also had artichokes and roasted garlic so those got added into the sandwich.



I pressed it for about 24 hours in the fridge and the olive oil had seeped into most of the bread. So so great.

Notes
I liked the tofu on the sandwich, it did bring a more neutral flavour to the heaviness of the olives and eggplant. I did NOT like the cream cheese. I'm not sure if it was the brand I used (Daiya, it was soo sweet) or if having it sit for 24 hours allowed it to react with the rest of the ingredients in some weird way? It nearly ruined the sandwich for me. Next time, no cream cheese. The rest of the sandwich was good, but the first time I made the sandwich was much better.

Vegan Pulled Pork Sandwiches

When I was growing up, church was three hours. In order to feed our hungry bellies after church in the quickest way possible, my parents would usually have something going in the slow cooker before we left for church. One of the things that I really enjoyed were the BBQ sandwiches. I'm not sure what meat was used (pork? beef?), but it was placed in the cooker and covered in BBQ sauce. When we got home, it was shredded and placed on toasted buns with slices of American cheese and pickles. I loved it. This is my vegan recreation of that.

Serves: 4 sandwiches (with about 1/2 cup leftover)



Inspired by BBQ Pulled Jackfruit Sandwich

Ingredients
1 15 oz can of jackfruit NOT IN SYRUP
1/2 12 oz jar of BBQ sauce (I used Stubb's BBQ Sauce, I think I was feeling particularly nostalgic for Texas the day I bought it.)

1/4 small cabbage
2 T vegan mayo
cumin
chiptole powder
salt
pepper

Bulkie buns
pickles
vegan cheese, optional (a nice vegan cheese sauce might be good here)


Method
Drain and rinse the jackfruit. Place the jackfruit into a 1.5 qt slow cooker, add BBQ sauce and stir until the jackfruit is covered. Cover the cooker and cook on low for 6 - 8 hours. I let it go to 8 hours and that might have been too long. Using a strong fork "shred" the jackfruit.

For the coleslaw, shred the cabbage into "coleslaw" style pieces. Mix in the vegan mayo and spices. Taste and adjust seasoning. This is here to provide some crunchy contrast to the jackfruit.

Toast the rolls, place a portion of the jackfruit on the rolls, add some coleslaw, and top with pickles and optional cheese.

Notes
This was amazingly delicious. I have one more can of jackfruit in my pantry and I think I might have to make this again. We both really really enjoyed it, a lot. Make it, and make it soon.

Chipotle Black Bean Burger and guacamole

This was on the menu board for Saturday, but I made it Monday night. I tend to make the menu board and not always follow it because either I want something else, or I don't feel like cooking, or any number of things. When I do follow it, it makes life soo much easier. This is adapted from Student's Go Vegan Cookbook.



Ingredients
1 can black beans, drained and rinsed
1/2 onion, chopped
5 cloves garlic, chopped or to as many to taste
1 small carrot, diced
1 chipotle with adobe sauce, chopped
1 t whole grain mustard
1 t soy sauce
2 t chipotle powder
1 t cumin powder
1/4 cup rolled oats
salt and black pepper

Guacamole
1 avocado
1 ear of fresh corn
salt
lemon juice
black pepper

Method
Preheat a cast iron skillet or medium heat. Add a small amount of oil and cook the onions and garlic until softened. Add the carrots, chipotle powder, and cumin. Stir and cook until browned and soft.

Meanwhile, mash the black beans with a potato masher or fork in a large bowl. Add cooked vegetables, chipotle, mustard, and soy sauce. Stir to combine. Add the rolled oats and mix again until mixed. Taste and adjust seasonings as necessary. Allow to sit for about 10 minutes or longer while buns are toasting or grill pan is heating. It will stick together better if this step is not skipped.

In a hot cast iron pan, add a bit of olive oil and swirl around until the pan bottom is covered. Divide the burger mixture into 3 or 4 patties and add to the hot pan. Cook for about 8 minutes on each side, or until browned. Serve topped with pickles, vegan mayo, and guacamole.

Guacamole
Remove the corn from the ear by running a knife down the length of the ear. Add the corn to a bowl. Remove the peal and pit from the avocado and add the meat to the bowl. Mash with a potato masher until your desired smoothness. Add salt, lemon juice, black pepper and any other spices you desire. Stir in with a spoon.


Notes
Hmm, we both really enjoyed these burgers quite a bit. They held together well, and were flavorful. I am excited to make them again.

Peanut Butter Sandwich: Lunchbox

This post is not really to show a recipe, but to show off the lunchbox again. I really love this lunchbox. I eat much better because I try to fill all the compartments, and it is displayed well. I know it is expensive, but I think it is very much worth it. Buy a Planetbox!





Ingredients
Peanut butter and jelly sandwich on sourdough bread
salted, roasted corn nuts
carrot sticks
super garlic hummus
cucumbers
kiwi
celery (located under the kiwi)
ginger snap cookies
coconut bar (on the side)

Notes
This is just an easy lunch I put together last week. We both enjoyed it.

Tasty sandwich

My amazing husband made me this sandwich yesterday while I was studying for my comprehensive exam. He is the best.



Ingredients
toasted baguette bread
Vegan mayo
olive tapenade
sautéed cremini mushrooms and onions
thinly sliced raw onions
thinly sliced cucumbers
red bell peppers
arugula
sriracha


Method
In that order, place onto the toasted bread. Devour with Kettle TIAS Salsa Picante chips and Orton Brothers Cookie Buttons in the ginger flavor.

Notes
We love to make tasty sandwiches. Other things to add are smoked tofu, avocado slices, and fresh basil.

Roasted Eggplant Muffuletta Sandwich

This is a recipe from Veganomicon. I have been eyeing it since I got the cookbook and finally made it the other day. I am going to make this many times more.

I didn't change anything about recipe. It is perfect the way it is. You need to press the sandwich for a few hours prior to the devouring and you should have seen all the physics text books I had stacked on top in my office. It was comical.

Notes
My husband thought this needed a creamy layer, like a mozzarella cheese. Maybe some tofu would suffice? I thought it was great.

Breakfast Sandwich

I have previously written about breakfast sandwiches, but since I eat them so much, I thought they deserved another mention.

My husband and I have these about twice a week and after we eat them, we fantasize about opening up a sandwich cart and only serving the best sandwiches.

The toppings tend to change based on what we have in the house but below is a favorite combination:
sourdough toasted bread
vegan mayo
sriracha
pickles
avocado
kale
smoked tofu
sautéed onions

Other optional ingredients:
cucumber
mushroom
fried egg - I do that for my husband
olive tapenade
pretty much anything that is tasty on a sandwich should go on here.

I love these so much and I would make them every morning if avocados didn't cost so much and I need a bit more variety in my diet.
